Tencha, the raw material for matcha, is grown by covering the new shoots that sprout around April to block direct sunlight, allowing them to slowly accumulate umami and the unique aroma of matcha in soft light.
By slowly grinding this tencha with a traditional stone mill, a vibrant deep green color, smooth foam, fragrant aroma, and rich flavor and umami are created.
Stone-ground matcha can only produce about 30g per hour, making this a precious Uji matcha that is finished with time and effort.
