We use Seiagree healthy eggs, cracked before production, and emulsify them in a vacuum emulsifier to prevent oxidation of the oil. This mayonnaise has a fine texture and the flavor of the ingredients.

Double-stirring emulsification in a vacuum emulsifier
To prevent oxidation of the oil, which makes up approximately 70% of the ingredients, the mayonnaise is stirred and emulsified in a vacuum oven. By suppressing oxidation, the flavor of the ingredients is enhanced.
