Inaniwa Kinume Udon - Hand-Made Dried Noodles from Akita
This hand-made Inaniwa udon from Yuzawa City, Akita Prefecture, one of Japan's three great udon varieties, won the Grand Prix at the Japan Food Selection in April 2024.
Every step, from kneading and cutting to stretching, is done by hand, and the high-hydration dough is aged for three days (four days from start to finish) to bring out the wheat's aroma, resulting in a strong spring and silky smoothness.
Each strand is about 21cm long, and the thin, delicate noodles are as refined as silk thread.
