This nametake mushroom is made with a generous amount of tea enoki mushrooms from Nagano Prefecture and plum paste from Wakayama Prefecture. Compared to white enoki mushrooms, tea enoki mushrooms are a variety closer to the original species, and are characterized by their strong mushroom aroma and flavor. Their thick stems give them a firm texture. The chopped plums are produced in Japan, which brings out the crunchy texture of the plums and their refreshing acidity and fragrance. To bring out the flavor of the ingredients, we use no chemical seasonings or antioxidants and finish the dish using a dashi stock made from bonito and kelp.
