Momoya's "Momoya's Seasoned Zha Cai Commercial Use 500g" uses the head of the cai, the knob of the large mustard plant (Da Che Tsai), a specialty of Chongqing, China, as the raw material, and uses a special quality zha cai that is fermented and aged in a jar for about a year using the traditional Sichuan method. The head of the cai is air-dried to bring out its unique texture and flavor, then salted and fermented with lactic acid, seasoned with more than 10 kinds of spices that are also used in Chinese herbal medicine, and finished with sesame oil and soy sauce. It can be used as a side dish or appetizer with rice, or as an ingredient in a wide range of dishes such as fried rice, soup, and salads. The texture is "normal", and you can enjoy the same taste as the bottled type in a large volume.
