Thick, black soba made with buckwheat flour from Shimane Prefecture. By using our unique low-temperature aging method to leave the noodles in a semi-raw state, the noodles have a good flavor and are characterized by the crispness and smoothness typical of Izumo soba. Attached is a dipping sauce that can also be used as a colander.
