Development of Kuzefuku's Original Shichimi
When thinking of what to pair with mayonnaise, many people probably think of tuna, mentaiko, and shichimi. "Since we already have tuna and mentaiko, shichimi would be a good choice as a classic sauce. But wouldn't existing shichimi flavors capture the essence of Kuzefuku?" This was the starting point for our development. We analyzed the approximate blend ratios and flavors of the three most famous shichimi flavors: Yawataya, Shichimiya, and Yagenbori. From there, we sampled all 100 different ingredients, searching for a flavor and spiciness that rivals mayonnaise. After many months of carefully selecting and blending the ingredients, we finally completed Kuzefuku's Original Shichimi. I believe the result is a flavor you can't get with just your household mayonnaise and shichimi peppers. It's quite spicy when you try it. Even a small amount gives off a tingling spiciness and a numbing aftertaste. I recommend this product to those who love addictively spicy food. It's also great with alcohol.
Shichimi uses 11 ingredients.
- The base of the shichimi uses three types of chili peppers. By using chili peppers of different sizes, we can adjust the speed at which the spiciness hits, creating a lingering, deep spiciness. The addition of roasted chili peppers adds a fragrant aroma. - The most fundamental element of the "aroma" theme is "sansho pepper." We use two types of sansho pepper. We combine powdered sansho pepper (green) from Wakayama Prefecture, made from dried, soft berries just as they begin to ripen, with brown sansho pepper, which has a gorgeous, floral aroma similar to that of Sichuan pepper. The combination of two types of sansho pepper deepens the aroma, leaving a refreshing aftertaste even after you've finished eating. ・We use two types of sesame: white and black. We use black sesame seeds that are less bitter and have a roasted aroma and a grainy flavor, while we use white sesame seeds that are roughly ground between roasted and ground, and are selected to bring out the sesame flavor. ・We use peanuts, an unexpected ingredient not often used in other shichimi. The unique ingredients are harmoniously combined with oils to create a rich flavor. ・We also use yuzu peel, red shiso, and aosa nori seaweed, which enhance the aroma.
Delicious on bread and baked
It can be used in a variety of ways, such as dipping dried squid in it, spreading it on shiitake mushrooms or salmon and baking it, seasoning stir-fried vegetables, or topping it on fried chicken for a Nanban style. It's the perfect snack to go with alcohol. Spread it on bread and top with melted cheese for a deliciously mellow, rich flavor and a delicious spiciness.
