Nakamuraya's "Authentic Sichuan: Intense Spicy, Numbing Mapo Tofu" is a mapo tofu sauce that combines the rich spiciness of long-aged chili bean paste from Pixian County in Sichuan Province with the refined, complex flavor of our special XO sauce. It harmonizes the fragrant flavors of shrimp and scallops with the rich umami of chopped black fermented black bean paste. The included special Sichuan peppercorns add a vibrant, numbing kick and a rich aroma. The minced meat is made from three types of pork, chicken, and beef, which are slowly stir-fried to bring out their flavor. Combined with the rich sauce, it achieves a deep flavor. To prepare, add the tofu and bring to a boil over high heat, then reduce to medium heat, add the green onions, and finish by drizzling with sesame oil. Finish with a sprinkle of Sichuan peppercorns (included) for a more authentic taste. This medium-spicy dish serves 2-3 people and offers an exquisite balance of aroma, spiciness, and numbing sensation.
