Nitto Brewing's "Asuke-Shikomi Mikawa Shiro Tamari 300ml" is a white tamari seasoning made with twice the amount of wheat grown in Aichi Prefecture compared to regular white soy sauce, using traditional Izu Oshima sea salt "Umi no Sei" and natural water from Oku-Mikawa. It's brewed slowly and naturally in traditional wooden barrels. Because it doesn't contain soybeans, it can't be labeled "soy sauce," but it offers the rich umami and body of wheat koji, and its light color enhances the color and flavor of the ingredients. It's free of preservatives and chemical seasonings, and is finished with rice shochu for its antiseptic properties. It can be used in a wide variety of dishes, including chawanmushi, clear soups, simmered dishes, and noodle soups. It's also suitable as a soy sauce for white fish and tofu sashimi. It's also suitable for those with soy allergies.
