Nitto Brewing's "Mikawa Shiro Dashi" 400ml is based on "Asuke-Shikomi Mikawa Shiro Tamari," a traditional cedar barrel-brewed dashi from Aichi Prefecture. It's made with carefully selected domestic natural ingredients, including line-caught bonito from Makurazaki, kombu kelp from southern Hokkaido, and domestically grown dried shiitake mushrooms. Its pale amber color brightens dishes without adding color, and its natural umami and richness are unmatched without the use of artificial seasonings or preservatives. Since it's soy-free, it's safe for those with soy allergies. It's versatile and versatile, suitable for a wide range of dishes, from Japanese clear soups and simmered dishes to udon noodles, chawanmushi (savory egg custard), and hot pots.
