Hinode Miso Brewery's "Kinmon Edo Amami Miso (Red, Kori) 500g" is a richly sweet red rice miso made with plenty of rice koji, recreating the traditional Edo Amami miso that has been passed down since the Edo period. Its distinctive feature is the use of two parts rice koji to one part soybean, bringing out its natural sweetness without the use of sugar or other sweeteners. With a low salt content of approximately 6%, it offers a moist texture and rich flavor. It can be used to season a wide variety of Japanese dishes, particularly with animal-based ingredients. It adds depth of flavor while suppressing the odor of meat or fish, making it ideal for stews, dengaku miso, and stir-fries. This traditional miso is also certified as a Tokyo regional specialty.
