Okinawan soul food is (1) aged with koji, (2) thoroughly smoked with cherry blossom chips, and (3) marinated in olive oil with raisins and almonds. The slight sweetness and smoky flavor of raisins go well with red wine and highballs. Island tofu has a cheese-like taste and texture. Almonds soaked in oil have a nice texture. Raisins add a refreshing sweetness to the accent. It's delicious to eat as is, enjoying each ingredient, but it's also delicious as a bruschetta-style topping on a salad or on a baguette.
