This sweet rice koji miso is made with Toyama Prefecture soybeans and domestic rice, and is brewed with 150% koji (rice malt) and no added alcohol.

Yamamoto Brewery's "150% Sweet Koji Nama Miso" (750g) is made with Enrei soybeans from the Tonami region of Toyama Prefecture and domestic rice. It's a sweet nama miso brewed with approximately 1.5 times the rice koji (rice malt) to soy (150%) ratio. The sweetness of the rice koji and the rich flavor of the soy are so strong that it's delicious even without adding dashi. This nama miso uses no additives, such as alcohol, and the yeast remains live. A secondary fermentation process, called "tenchi-gaeshi," accelerates fermentation, resulting in a mellow, deep flavor and rich aroma. It's perfect for a wide range of uses, from everyday miso soup to a secret ingredient in dishes and gratins.
