Each sardine is carefully decapitated and simmered using a unique method until even the bones are tender, reducing the fishy odor and bitterness typical of blue fish. The soy sauce is from Yamasa Soy Sauce, a long-established company in Choshi, and the mirin is locally produced in Chiba Prefecture. The sauce has been added to over 50 years, resulting in a deep, rich flavor.
