We use "Ishigaki Salt" made by locals who grew up in the great outdoors of Ishigaki Island, one of the Yaeyama Islands, the southernmost part of Japan. This special salt is called "sea salt" because it is made from 100% seawater. It has a crunchy texture and just the right amount of saltiness!
