“Konbu root” refers to the base of the leaf of kelp. Kelp grows through repeated cell division in its roots, so the closer it is to the roots, the younger it is and the more concentrated its ingredients are. For this reason, it has higher nutritional value than the leaves, which is good for health, and because only a small amount can be harvested, it is highly prized.
